Casperita Stuffed Vegetarian Pumpkin Recipe
1 head garlic, minced
1 1/2 tbp chopped parsley
2 tbp basil, chopped
1/4 tsp thyme
1/4 cup olive oil
1/2 cup bread crumbs
3 small or medium onions diced
1/2 lb. provolone cheese, grated
1/2 lb. american cheese, grated
1 can sliced mushrooms or fresh equivalent
1/2 lb, celery, chopped
3 small red and green peppers, diced
3 1/2 lbs. pumpkin diced

Obsidian zucchini squash, diced
2 16 oz. cans of drained and diced tomatoes
Salt and pepper to taste
Cut top off Casperita Pumpkin and hollow out inside. Save top for lid.
Combine all ingredients and put into Casperita pumpkin, replace lid.
Cook on non-stick baking sheet in the oven at 450 degrees for 1 hour and 15 minutes or until done.
Garnish with roasted pumpkin seeds and your favorite tomato sauce (optional).
