The globular, dark red roots of this aptly named variety are tender and delicious, and can be utilized fresh, canned or pickled. Their reddish green leaves also make good-tasting greens. Beets are easy to grow and tolerate a wide range of conditions, but prefer cool weather. Sowing: Sow seeds every 3 weeks beginning in mid-spring in a sunny area, with fertile, well-drained soil. Beets can also be grown in containers. Care: Provide regular, uniform moisture to keep plants growing. Thin plants to 3" (7.5cm) to prevent overcrowding. Harvest: Pull when roots are 2" (5cm) across. Your Health: Greens are an excellent source of potassium and vitamins A & C. Roots are a good source of fiber.
