Also known as Roman cauliflower or broccoflower. This is a variety that has been grown in Italy for over 400 years. It is much more tender than modern broccoli and cauliflower. Romanesco has a mild, creamy taste and is a little bit nutty. Try it raw or lightly steamed/sauteÚd. It is completely unique looking vegetable with spiraling apple-green heads. Plant in mid-winter in mild climates and May-June in cool climates.
1/2-1 lb./acre. 14-16 days, 70║F. Can be direct seeded. For transplants start indoors 4-6 weeks before setting out.
